Spiced Apples with Pumpkin Seeds

Fall is here and I am focusing on seasonal flavors and foods. Apples are one of my favorites, especially the crisp version, to eat raw or bake with. These spiced apples are super versatile and can be eaten on top of oatmeal, dessert, or alone.

Ingredients

  • 3 large apples, or roughly 5 cups, chopped (I used Honeycrisp)

  • 1/2 cup raw pumpkin seeds

  • 1/4 cup maple syrup

  • 1 teaspoon cinnamon

  • 1/2 teaspoon of nutmeg

  • dash of clove

  • 1 teaspoon of vanilla

  • salt

Method

Toss the pumpkin seeds with olive oil and a healthy pinch of salt. Roast the seeds at 400 degrees for 5 minutes. Watch closely, they can easily burn.

While the seeds toast, warm 1 tablespoon of oil in cast iron pan. Once it’s hot, add apples, maple syrup, spices, and salt.

Cook the apple mixture for about 5-7 min until the maple starts to caramelize but apples still have a bite to them. Remove from heat and add the vanilla and stir in pumpkin seeds.

Eat on top of oatmeal, a warm slice of pumpkin bread or with dessert. Also perfectly delicious straight from the jar, warmed or cold. Enjoy!
