Beet & Berry Pancakes
These sneaky Beet & Berry pancakes are a great way to get your littles their daily dose of powerful antioxidants all while having a familiar breakfast time favorite meal.
Ingredients:
2 cups oats, gluten free if desired
2 spotty bananas
1/2 of one small roasted and peeled beetroot
1/4 teaspoon beetroot powder (optional)
2 cups milk, I used soy milk
1 tablespoon flaxmeal
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
coconut oil for frying
Method:
Add all the ingredients to the blender and mix until smooth. Let the mixture sit for five minutes while you warm a coconut oil. Cooks 3 to 4 minutes each side. Top with coconut yogurt, fruit and syrup and enjoy :)
