School-Approved Seedy Banana Bars

Store bought granola bars are so full of sugar, they are not going to satisfy your little one for long enough to make it to the next meal. I love these bars because they are rich in protein, fiber, and filling complex carbohydrates. Plus, a little sweet from the ripened banana, maple syrup and mini chocolate chips. Raisins or nuts would also be delicious additions, feel free to mix it up!

Start by preheating your oven to 350 degrees. Once it’s warm, line a baking sheet with parchment paper and toast oats for 10 minutes.
While your oats are toasting, whisk the maple syrup and coconut butter over low heat until fully incorporated. Next, mash the bananas & whisk together all wet ingredients. Fold in your oats, pumpkin seeds, hemp seeds, cinnamon, salt and chocolate chips. Pour into a 9x9 lined baking dish, then pop into the oven for 30-40 minutes. Let fully cool before slicing and serving. Enjoy!
