Miso Pesto
This is hands down my favorite way to enjoy pesto. I serve it as a dip, over pasta, or atop a Nourish bowl. The miso gives delicious umami pairs with loads of garlic and added protein from the hemp seeds. The spinach helps balance the strong flavors, not to mention the major nutritional win with all those greens! This is a family favorite. Insider tip: triple the recipe and freeze for quick future dinners. Enjoy!
Ingredients:
4 cups of spinach, loosely packed (about four large handfuls)
1/4 cup fresh basil, packed
1 tablespoon miso paste
½ cup extra virgin olive oil
Juice and zest of one lemon
4 tbsp hemp seeds
1/4 teaspoon of sea salt, more to taste
Method:
Add all of the ingredients to a blender and blitz!
