Super Simple 6am Waffles: vegan, gluten free, sugar free

This recipe came about when my daughter requested waffles in the early morning, when I could not fathom doing much more than a little mixing and a little cooking. These waffles come together easily in the blender, and require minimal cleanup, which is a non-negotiable when working in the toddler breakfast hour. Don’t let the simple ingredients fool you, these are soft on the inside and crisp on the outside, satisfying any waffle craving.

These are not just for kids, although they are kid approved! When recipe testing these waffles, my husband polished off the entire batch before I was able to photograph it. So, they’re husband approved, too!

Like all of my recipes, this recipe can be made with simple pantry ingredients, so you can whip them up at anytime. There are only four key ingredients, but add in some of the optional additions to change up the flavor profile. I prefer to add a splash of vanilla and a handful of greens. My mommy cooking suggestion #1 is to add greens to any baked goods for your kids, since the flavor goes unnoticed and, as parents, we feel better knowing they got their greens in.

Top with the classic combination of butter and warmed maple syrup or add fruit compote and a drizzle of nut butter. These waffles are simple enough to create weekly, but delicious enough to serve on a special occasion.

INGREDIENTS

1.5 cups of rolled oats

3/4 cup of nondairy milk (I used almond or homemade coconut hemp milk. Avoid using oat milk because it makes the mixture too starchy.)

1/4 cup of coconut oil

1 banana

Optional add-ins: a handful of spinach, a splash of vanilla, a sprinkle of cinnamon and fresh or frozen berries

METHOD

Plug in and preheat waffle iron.

Add all of the ingredients to the blender, except berries, if using. Blend until the mixture is fully incorporated. Stir in optional berries.

Add half the batter to the preheated waffle iron and cook on the medium setting. Once cooked, remove from waffle iron and cook the remaining batter. Top with butter, maple syrup, fruit compote or a drizzle of nut butter.

Makes two servings.
