Cookie Dough Bars with Peanut Butter & Chickpeas

It’s warming up and for my family, that means we head outside as often as we can. I am always fully loaded with snacks to energize and satiate my three kids and these cookie dough bars are our current favorite. They’re made with chickpeas, peanut butter, oats and almond flour and full of healthy fats and fiber. They’re sweetened up with a few dates and maple syrup and don’t skip on the chocolate chips on top. I know you’ll love these!

These blondie inspired cookie dough bars are a family favorite and super easy to make. All ingredients go into a food processor or high speed blender, mix, pour and bake. Find the recipe below ~

Ingredients

1 can of chickpeas, drained and rinsed

½ cup peanut butter

2 teaspoons vanilla

4 date, soaked in boiling water for 10 minutes

½ tsp salt

3 tablespoons coconut oil

¼ cup flaxseed meal

½ cup soy milk

½ cup almond flour

½ cup oats

¼ cup maple syrup

½ teaspoon baking soda

½ teaspoon baking powder

Handful of cacao wafers


Method:

Set your oven to 350 degrees. Blend in a high speed blender - the batter is really thick and sticky, so you’ll need a strong blender for this one! Spread into a parchment lined pan and bake for 40 minutes.
